Tequila-Lime Chicken Fettuccine Alfredo

Ingredients

  • 1 Pkg Bell & Evans Fajita Style Cut Chicken
  • 2 Cups Bell & Evans Organic Chicken Bone Broth
  • 1 lb Fettuccine pasta
  • 1 TB Olive oil
  • 1 Red onion, cut into 1/4-inch slices
  • 1 Orange bell pepper, cut into 1/4-inch slices
  • 1 Red bell pepper, cut into 1/4-inch slices
  • 1 small Jalapeno, seeded and minced
  • 3 TB Tequila
  • 1 Lime, juiced, plus 1 lime, cut into wedges
  • 2 tsp Chili powder
  • 1/4 cup Heavy cream
  • Salt and black pepper, to taste
  • 2 TB Chopped fresh cilantro

Preparation

  1. Fill a large pot with water and bring to a boil over high heat. Cook the pasta according to package directions; drain and set aside.
  2. Heat oil in a large straight-sided skillet over medium-high heat. Add chicken, and season with salt and pepper. Cook, stirring occasionally, until chicken is fully cooked and golden-brown, about 6-8 minutes. Transfer seared chicken to plate.
  3. In the same skillet, add onion and bell peppers, and cook, stirring occasionally, until tender, about 5-8 minutes. Add jalapeno and cook until fragrant, about 30 seconds. Stir in broth, tequila, lime juice and chili powder and bring to a simmer. Cook, stirring occasionally, until reduced by half, about 5-7 minutes. Add heavy cream and cook until sauce thickens, about 1-2 minutes.
  4. Return chicken to skillet and pasta and toss to coat, about 1-2 minutes. Season with additional salt and pepper, to taste. Garnish with cilantro and serve with lime wedges.
  5. Tip: Substitute vodka or white rum for tequila.
