Roasted Chicken and Grape Brie Bites

Ingredients
- 2 Pkg Bell & Evans Boneless Skinless Chicken Breast Cubes
- 1/2 cup White balsamic vinegar
- 1/4 cup Olive oil, divided
- 2 TB Pure honey, plus more for garnishing
- 2 TB Chopped fresh thyme, divided
- 2 1/2 tsp Salt
- 1/2 tsp Black pepper
- 2 lb. Seedless red grapes
- 2 (8-oz.) wheels Brie, cut into 1-inch cubes
Tip
- Feel free to substitute regular balsamic vinegar for white balsamic vinegar.
Preparation
- Open chicken packaging tray. Add vinegar, 2 tablespoons oil, honey, tablespoon thyme, salt and pepper to the tray. Massage the mixture into chicken to cover completely. Allow to marinate, refrigerated for several hours, or overnight.
- Preheat oven to 450°F and line a rimmed baking sheet with parchment paper. Discard marinade and pat chicken dry with paper towels. Thread one cube of chicken and one grape onto each toothpick or 4-inch skewer, leaving room to thread cubes of brie after cooking.
- Place bites in an even layer onto the prepared baking sheet. Drizzle with oil. Bake, flipping bites halfway through, until chicken is light golden-brown and internal temperature reaches 165°F, as measured by a meat thermometer, about 15-20 minutes.
- Thread brie cubes onto the top of each skewer. Drizzle with honey and garnish with remaining thyme. Serve and enjoy.
