Peanut Chicken Stir Fry

california olive ranch olive oil
1 pk
bell & evans chicken tenders (11-14 oz), sliced into 1" pieces
1 pk
lunds & byerlys stir fry mix (produce department)
1 c
full circle peanut satay sauce
1⁄4 c
cilantro, chopped
1⁄2 c
roasted, unsalted peanuts, chopped
2 c
cooked brown basmati rice or rice noodles


Heat oil in wok over medium high to high heat. Add chicken and sauté for 3-4 minutes, stirring to evenly cook chicken. Add vegetables and cook for 4-5 minutes, continuing to stir. Add satay sauce and stir to distribute sauce evenly.Remove from heat and sprinkle with cilantro and chopped peanuts. Can be eaten as is or served over brown basmati rice or rice noodles.
